Here are some peachy temptations “Call me by name” style

Internationally acclaimed Filipino pastry chef Miko Aspiras of T.Dining has conjured up a peach dessert inspired by a film near and dear to his heart.

Chef Miko Aspiras, himself a huge Call Me by Your Name fan – he’s seen the film six times – wanted to create a dessert that encapsulated the wonderful atmosphere of the film. This dessert, christened by its creator as “Call Me Peachy,” is a tribute to the pivotal peach scene that features prominently in both André Aciman’s novel and Luca Guadagnino’s silver screen adaptation.

It jives with the subtle sensuality that curls around the film like a wisp of smoke, unusual in its character yet easy on the taste buds. Crafted in the likeness of the very fruit that inspired it, the dessert is comprised of peach and nectarine mousse, filled with brunoised peach compote tossed with juice and Tonka beans; floral notes come into play due to the orange blossom crème Anglaise at its centre. It is then dipped in white chocolate and served atop a Feuillitine sable tarte crust.

“I was frustrated that Oliver did not get the chance to taste the infamous peach,” recalls Aspiras. “I decided to create a 100 per cent edible peach that presents a mix of fruity and floral flavours that are in tune with the summer, the season when most of the film takes place”

 

Call me your Bellini-Oscar inspired cocktail

There were a lot of stellar movies this year, so I had plenty of inspiration to create three tasty (and easy) drinks using Lillet. Call Me By Your Name is maybe my favorite Best Picture nominee and I channeled my inner Elio, strapped on some 80’s vibes, and got down with the Call Me By Your Bellini. Inspired by Harry’s Bars famed bellini,it’s just three ingredients:

  1. white peach puree

  2. Lillet rosé

  3. chilled Prosecco

Stir in mixing glass. Pour in juice glass a la Harry’s Bar in Venice and add a twist of lemon.

If you’ve seen the movie, you know that peaches play an important role;)
